Have you looked for the blue prints for those model cars ??? - As long as you have the name of the cars you should be able to find the blue prints. Google could be your best friend.

Photos of models would depend on your camera. I am currently building "Cain" from robocop 2 for which I have a really small model (About as Long as my middle finger), but because I have a good been able to take some really good images of it - shame the details on the model are badly moulded. - So its up to your set up and models. If you have the models still in parts it should be very easy to model.
