ok i'm confused. WHAT is the purpose of the checker pattern when applied to the model? Just so the texture lays on it right? What would a proper checker pattern look like? I know this sounds dumb but I can't seem to unwrap anything right and get a good checker on it, even 1 simple rectangular plane

Yes, the checker pattern is for you to see if there is stretching or distortion in the uv map. The goal is for all the squares to be square (not skewed or stretched) and all the same size.
The map also helps you to see texture seams.
