Maya 2020 fundamentals - modelling the real world
Get halfway through a model and find it's an unworkable mess? Can't add edge loops where you need them? Can't subdivide a mesh properly? If any of this sounds familiar check this course out.

Consider books also. There many that are project based. Visit your local bookstore and browse to see if there are any you like. One caution, is that project books tend to make terrible reference later on. If you want some good beginner reference I recommend the visual quickstart series (also reasonably priced as far as computer books go). I like to carry a book with me everywhere, so that If I'm ever stuck waiting on something at least I can still get a little smarter while I wait.

Im working through it now and its an excellent book that covers modelling, rigging and animation techniques. Excellent book for starters.
