I'm always curious to see how people work in 3D apps. Max's interface is so abhorent that I've pretty much stripped it apart and customized it to something unrecognizable. With Maya, no need to do that. All I really do is remap hotkeys and create custom shelves.
I like to have as much screen space as possible but still have all the stuff for the particular job i'm doing at hand. I use hotkeys, the hot box and custom shelves (and some of the built in too) all the time. I usually have the status line, main menus, the tool box and the help line hidden...
No special plugins here, mostly because my main workstation is a Mac. I do, however, use RenderWare on my PC, but that's purely a job thing. Heavy usage of mel scripts on both platforms though.
And I really need to use shelf tabs to keep my shelf buttons organized. I haven't gotten around to cleaning out the default tabs from 4.5 (I could care less about having Dynamics and Deformation tabs), but I'm just too damn lazy to do it.
