Using a lattice....?

I often see in "walk-through" tutorials that people are using a "lattice" to form and mold objects. I have no idea what this is and no clue how to make one or use it......user added image. Would anyone be so kind to enlighten me.....?

Under the animation module, you can find Lattices under Deform > Create Lattice.

With an object selected, apply the lattice. Right click on the lattice and choose lattice point components. You can then deform the object with the lattice grid.
