Does anyone know the best way to
create gums/teeth for this character?
Should I create a separate piece of geometry or extrude
from the main character?
I would appreciate some crit too. Thanks

Personally I would create them as separate geometry, and put the yeti on a reference layer. Then parent them to the head when you are finished, though its personal preference.

Thanks J5ive,
do you think I should mould a new shape from scratch or
use the existing geom. (Duplicate the inside of the mouth and shrink and then model, or start from a primative?)
I want to rig this character for animation later on too.
It needs some tweeking in the modeling phase first...
cheers

Depends how you feel most comfortable, I think using the existing geo could get too messy and leave you forever rotating and panning around your model. I would start a separate primitive/s get the general shape, and then tweek it into the position of the yetis mouth.
