Maya 2020 fundamentals - modelling the real world
Get halfway through a model and find it's an unworkable mess? Can't add edge loops where you need them? Can't subdivide a mesh properly? If any of this sounds familiar check this course out.

Move 1 vert and it influences others

When modeling with polygons, I would like to be able to move one vertice and have other nearby vertices be influenced. Is this possible or do I have to make such adjustments in subd or proxy mode?

I like using subd until my vertices start going inside the model. Then I can't see them anymore (to select them) unless I go to wireframe mode.

as far as I know thats not an option with poly's. which I think is why Kurt always switches back and forth between poly's and subd's in his tuts.

try using the soft modification tool, I think that it'll suit your needs.
