For me I found ears to be tricky, but I find good hair is most difficult. As for UV's I don't find them hard just exceedingly tedious and boring.
I believe what makes good character modeling hard is that as humans, from birth, we are all programmed to recognize people.
Though very few could pick up a hammer and chisel or brush and canvas and carve or paint a convincingly good character. We are all experts from birth at recognizing anything that is amiss in any representation of a human figure.
So as a character modeler your work must be near perfect as even the most minute flaw will be detected even by the least artistic person.
