hi
i dont know what version of maya you're using, but if you go into edit polygons> Normals>soften/harden>all soft,
it might do the trick

it's easier just to grab the edges and use the smooth function...
uhh, i dont have maya in front of me and it's been a few months since i played maya...
umm, you can find the option if you hold down shift or control and the right mouse button'
or do what jali said
