Skin Binding Smooth or Interactive

I am preparing my first model for animation. The movements will be gestures of hands and head mainly in seated pose. So I am just about to bind the skin /skeleton is ready/, but I do not know what is the better option - Smooth or Interactive Bind. Also when binding do you select all the joints, or the end joints leave unselected? I am asking this, because I have read one tutorial where the author was not selecting the end joints of hands and feet when binding.

Curious, did the instructor say why they weren't adding the end joints to the bind?

Actually not, so I will assume I'd better bind all...
