Hey mate.
Baking is a process where a texture is "cooked" onto geometry to preserve and hold texture info, as far as I understand what I have read.
It depends if you are using nCLoth or Cloth:
nCloth automatically assumes gravity so it will fall when you run the timeslider, and all you have to do it give it a passive object to collide with.
Maya Cloth requires the field of Gravity to be added to force it to react.
