Over the last couple of years UV layout in Maya has changed for the better. In this course we're going to be taking a look at some of those changes as we UV map an entire character
There are tools, but I don't think in the deformation menu. You could do it a number of different ways, depending on the realism and level of detail. You could build a few different stones and then just duplicate them and stack them. Or you could create a particle system that instanced the stone geo and fell into a neat wall. Or you could create a cube with several divisions and extrude all the faces (with faces together checked off) out a bit and make them a bit random. Or you could paint a grayscale texture that has dark areas for pushed in bits and apply that as a bump normal or displacement map. Or you could come up with your own way, that's the beauty of maya.
You would manually have to do this, there may be a script for a random feel, cant say for sure...might make it easier to use the sculpting tool for quick changes.
