The ngons have nothing to do with the texture seam. The seams are because the uv's for the borders are in a different area of the texture map. You would have to join the borders to the main body so they are adjacent in the uv space to eliminate the seams. The alternative would be to use a projection painting application to project the textures but seams will be inevitable.
You can try to hide them or place them where they might naturally occur. Where two different parts of the violin are for instance. These would naturally have slightly different grain.

It looks like the borders of the violin and the f's are are in their own shells.
