Over the last couple of years UV layout in Maya has changed for the better. In this course we're going to be taking a look at some of those changes as we UV map an entire character
Are you using an "image plane", or a texure on a regular plane? If it's a texure on a regular plane, you can try selecting the shader you have on the plane, open the Hardware Texturing tab, and set the texture resolution to the highest value.
