I'm happy to give you my best advice about feeling overwhelmed by programs like Maya. It's simple, you'll probably only end up using about one percent of what's there anyway, so just focus on learning that. It's probably different for everyone though. I make videogames with Blitz3D, so I mostly use split polygon, move vertex, merge vertexes, and the similar tools in the UV texture editor. Other than that, I use the camera tools to change to view, and the hypergraph to keep everything in the scene organized. I'm sure other people use more tools than I do, but I would assume in general most people also try to keep it to a minimum, not try to memorize the entire interface.
