The split poly tool is call Cut Faces or Cut Edges, and you can find it either in the poly tools menu on the right, or you can right click the model, and it is on the menubar thing that just appeared above where you clicked.

:p Well I too downloaded 3ds Max 8 and have been using it for a month... I still cant really grasp how to use proper HDRI in it though... seems kinda comlicated. And its UI kinda sux as well...
