This course contains a little bit of everything with modeling, UVing, texturing and dynamics in Maya, as well as compositing multilayered EXR's in Photoshop.
One way to do it is to assign a ramp texture to a sphere and then assign a fractal texture to the iris color. Here's a tutorial that explains it all in detail.
